The pural of moose is moose due to the word being adopted from the Native Americans. This is also why the goose/geese comparison doesn't work, since "goose" is a Germanic word.

I saw someone online say something to the effect of: "English is like an amalgamation of three languages, borrowing rules from all and picking and choosing which ones it does and doesn't want to follow".

This is likely the cause of inconsistencies like this. The way English came to be is also with quite a few dialects, meaning different words come together and it doesn't always make sense.
