I'm confused about 1080 by 1080, did you mean 1080p? (1920x1080). but it should play it just fine with a 1050ti medium.

Specs: CPU: AMD Ryzen R7 3700X @4.4Ghz, GPU: Gigabyte RX 5700 XT, RAM: 32 GB (2x 8GB Trident Z Royal + 2x 8GB TForce Vulkan Z) @3000Mhz, Motherboard: ASRock B550m Steel Legend, Storage: 1x WD Black 1Tb NVMe (boot) + 1x Samsung 860 QVO 1Tb SSD (storage), Case: Thermaltake Core V21, Cooler: Noctua NH-D15

A GTX 1050Ti is a good graphics card for 1080p and as far as I know, Fortnite is not that demanding. You should find videos on YouTube of people with similar setups running that game. You might want to add a bit more RAM, though. Used DDR3 RAM is dirt cheap these days.

No, the 4Gb for the GPU is the memory the graphics card has for itself (it's got some fast RAM built into the card dedicated to video stuff)

 

The 2Gb CPU max memory is for when you use integrated graphics, and sets the maximum amount of your normal RAM your CPU can use for video stuff

I honestly would just pick up a 1050 for fortnite. for pubg, you might need the better cpu still, but a 1060.
