Do these exist?

Are there any good gaming headsets with active noise cancelling, true/virtual 7.1, and wireless? Also with good build quality.

No, for many reasons:

1) Getting TRUE 7 channel audio over wireless is not something that can be done over conventional bluetooth etc, so no company has made this because the cost of the wireless hardware needed would be immense (if its even possible to get it small enough to fit in headphones sensibly)

2) You don't need to purchase a headphone that is listed as having "virtual 7.1" on the box. Virtual 7.1 is just software modification of the audio and can be done on ANY set of headphones. There is no actual hardware difference, its simply a software gimmick.

 

What you're looking for you'll want to get a set of decent bluetooth headphones that feature noise cancelling. Something such as bose quietcomfort etc.
However, consider if you actually NEED noise cancelling. Passive noise cancelling is better than active noise cancelling and if you're in your bedroom etc its unlikely to be necessary. (There's a good reason why you don't see any "active" ear defenders on the market)
