Acer Predator Z271U or Acer Predator XB271HU

The Z271U has a TN panel, so viewing angles won't be the best and colors might need more tweaking. However, the XB271HU has a VA panel which will have better colors and viewing angles, with that said, the pixel response time is 4 ms (XB271HU) versus 1 ms (Z271U). IMO, I would go with the XB271HU over the Z271U, mostly because I would trade response time and monitor curvature for better viewing angles and color accuracy. Otherwise, they are both great monitors and either one would be a great choice. Just make sure you have the graphics hardware to drive the monitor.

Oh yeah, your good. The RTX 2070 should plow right through 1440p 144hz easy, plus if the game get's stuttery or sluggish, G-Sync will take care of that problem.
