Corsair H55 high temps...

I am using a I7700K at stock speeds with a corsair H55 watercooler. While idle it stays around 40 degrees C. But while doing some benchmarks it can go as high as 80 degrees C. Whilst gaming it stays around 60 degrees C. Any thoughts on al of this I am fairly new into watercooling. :)

80C while benching is actually quite acceptable for a 7700k

80 degrees in benchmark is pretty normal with an i7 7700k cooled by a corsair h55. it isn't a good liquid-cooler

Its normal, even quite good considering your CPU's history for running hot. However, I would caution against any overclocking as you are already on the edge of that cooler's abilities. If you want to lower temps a bit and perhaps reduce the noise you could spend some extra money and get a better, quieter fan. The one included in the box tends to get quite noisy under load and a good static pressure fan will push more air through the radiator. Don't expect miracles, probably maybe a few C difference but probably a big reduction in noise output.

Those temps are fine, just don't overclock it. If you want lower temps, you can undervolt the CPU, or run push/pull with decent fans.
