If you want ONLY Minecraft, a Celeron or Pentium (Skylake) should be able to do it with a cheapo GPU for less than anything else, and more FPS.

The Xeon E3 1231 V3 IS BETTER Than the Core i5 4690K and a Significantly better value for the non-overclockers or value shoppers.

Intel Core i3-4xxx or i3-6xxx are perfect price to performance CPU with enough room in your budget to buy a great budget GPU like a GTX 950.

this right here. if its just minecraft, which is single threaded btw, a G3258 OC to ~4.5Ghz is your best bet

Something like this would probably be a solid build and provide you with a good base so that you can use it for a lot longer than any Celeron.

If you're getting a new CPU, you need a new motherboard. Here, take this

GTX 1070 - Ryzen 5 3600x - Corsair H100i V2 - 32GB DDR4 3200

Choose what you  want, but I don't think going with an AMD 8-core would be in your best interests(which are for gaming right?):

That video shows benchmarks and in almost everyone, it wins.  Tests are done with a GTX 980 Ti.
