she knows very little about tech and i want the easiest os for her to use. also if you could make a recommendation she wants to spend a max of 500. she doesn't mind buying last gen

If she is familiar with IOS (iPhone OS) the new iPhone SE 2020 edition is $400 with 64gb storage and a wide verity of colors. If you want to spend less the iPhone 7 is around $200. If you want to go with andoid theres plenty of choice with the Samsung galaxy S7 coming in around $150 refurb.

Recently bought my 60 year old father an iPhone SE ($400 USD). He said its a hell of a lot easier to use than his Android device. Honestly for the price of the SE its not a bad deal.
