RJ45 is the type of plug, the connector. Cat 5, for example, is 4 pairs of copper wire twisted together. Cat 5 is the twisted copper cable, and RJ45 is the connector.

Cat 5 and Cat 6 = cables and only the cables

RJ45 = the plug at the end of said cable

No, CAT5 and CAT6 could be used with other connectors, but that would not be under normal consumer circumstances. Now we're talking industrial applications.

 

Under normal circumstances, both CAT5 and CAT6 (And soon CAT7 too once it catches on in the consumer level) will use RJ-45 connectors, in pretty much any time that you a regular consumer would ever encounter them.

 

All the consumer network equipment, including Modems, Routers, Switches, Wireless APs, laptops, and desktops, all use RJ-45 connectors for the ethernet protocol/standard. We then use standardized ethernet cables in the form of CAT5, CAT5e, CAT6, or CAT6a ethernet cables. They all have RJ-45 connectors on them. They are also all backwards compatible with previous versions.

Good explination. But more clarification if somehow that didnt make it clear enough RJ-45 only means Registered Jack 45 its not the cable itself.
