I figured I would post what I settled on and built.

 

I went for a Ryzen 5 2600 in the end with 16BG RAM and an RTX 2070 in an NZXT H500 case. Some images below (images in spoiler because they are huge):

I am going to add some RGB lighting to the case, I think the ASUS motherboard allows me to sync the colour to the colour changing on the graphics card? I'm also going to get a 1440p monitor because I'm still using a 1080p one.

For rgb light, you can DIY it, get a rgb strip and the 4 pin connector. No need for branded one, they all work the same.

You even can go outside the case, like put the strip around your desk corners.

Yes it will change color according to the asus software.
