So i am currently working on putting a build together and i was wanting to do a raid 0 configuration. But upon research i discovered runless you go with thread ripper you can not boot from a raid array. So would i need 3 m.2 drives? 1 to boot from 2 to run the raid?

Why do you want raid 0? It makes basically no sense, just get a nvme drive if you want faster. Raid 0 won't boot or be any faster for basically any desktop use.

What nvme drive would you suggest? 1tb storage if possible

Just get a 970 evo, its about as fast as you can get and a pretty good price.
