Strange behaviour above 40% RAM usage

Hey,
I need some help troubleshooting a strange behaviour happening on 2 identical Windows 10 xeon-based machines. When I start using around 40+% of the 64GB of RAM the computers both seem to slow down to a frustrating point. Plus, one them will have a bad habit of freezing, forcing me to reboot.
Any input will be appreciated!

8x8GB of 2400Mhz Vengeance LPX
Asus X99-E WS
Inno3D 1080Ti
Corsair RM650X
SSDs for Windows and apps

What you're running that hogs almost 30GB of ram ?
Is it some kind of data science ?

When did this start happening?
Bad software update perhaps?
Out of curiosity is there anything plugged into a USB port?

Mostly 3D rendering and level editing + lightmass with Unreal Engine, it'll eat those 64GB if given the occasion

Can't remember, but it's been a while, and we went through lots of updates in the meantime...And yes we do have a few things plugged in, beside mouse/keyboard, eHDD, VR headset (on one computer only tho...)

When your slowdown occurs does your CPU usage gets higher ?

Doesn't seem to, plus I don't need to be actively rendering for the slowdowns to occur, simply filling the RAM seems to be enough...

Different work environments, but when this happens to my friends video editing machines its because bad updates causing issues with drivers esp USB ports. If you can simulate the work loads with out having anything other then keyboard-mouse plugged in it will narrow somethings down.
