Bottleneck

At which point I can say that my eyes are creating bottleneck in terms of gaming? I mean, either 75 fps or 144 fps or 240 fps that could go beyond the perceptions of human eyes?

Think about how you see everything in real time, the human eye caps well beyond a mere 240fps rate. Actual number? No one knows since all eyes are different, but there's no monitor with a higher refresh rate than our eyes :D

Its not really a bottleneck as reaching the limit of what can we see is the target.

Router:  Intel N100 (pfSense) WiFi6: Zyxel NWA210AX (1.7Gbit peak at 160Mhz)
WiFi5: Ubiquiti NanoHD OpenWRT (~500Mbit at 80Mhz) Switches: Netgear MS510TXUP, MS510TXPP, GS110EMX
ISPs: Zen Full Fibre 900 (~930Mbit down, 115Mbit up) + Three 5G (~800Mbit down, 115Mbit up)
Upgrading Laptop/Desktop CNVIo WiFi 5 cards to PCIe WiFi6e/7

Honestly I used to not be able to tell the difference between 240hz and 144hz but after using 240hz for so long I can tell the difference when going to 144hz as I am so used to 240hz. Really your eyes adapt and can change dynamically how well you can perceive things.
