Not sure about getting a z370 board with a cpu you can't overclock, might want to take a step down on the board and get an 8700 non K instead.

ASRock - Z370M

I meant get an H370 or B360 motherboard rather than a z370 beause you aren't getting a cpu that can be overclocked so there is no need for z370. You might also want to look into RAM that's rated at 2666 rather than 3200. Save money on those two components and put the extra funds into something that you'll actually notice like moving up from the i5 8600 you're going to get and get an i7 8700 instead. To me that would seem like the better move.

Or you could just get the 8600k because its the same price if not often cheaper right now.

Use an H370 motherboard to save a bit, Asus ROG Strix H370-I Gaming.

Locked Coffee Lake i5 like the i5-8600 will not run memory above DDR4-2666. A kit like Team - Vulcan 16GB (2 x 8GB) DDR4-2666 Memory would be fine. For slightly better performance use a kit like Kingston - 16GB (2 x 8GB) DDR4-2666 Memory.

A build log for the case would be nice.

80+ ratings certify electrical efficiency. Not quality.

I don't see the point of getting an unlocked processor in that case

Except that it's sometimes cheaper than the locked version...
