I have a gtx 1080 ti so no G series Ryzen for me. 

Need a tad more information about what you want to play with it. With a 1080 Ti, any of the i3 or Ryzen 3s are out, if you're playing at 1080p. 

Is budget a non issue?

Do you already have a motherboard? 

Is this just a gaming build?
What resolution will you play at?

Can't find 8600 in my local market but I did find 8400 and it's half the price. A Ryzen 5 2600 cost USD10.00 lesser than the i58400. Since i3 and Ryzen 3 are out of the equations, would I be better off choosing the Ryzen 2600 for the much faster ram speed? They did say that Ryzen 5 2600 is almost equivalent to a high end i7.

I'm using a ryzen 2600 you could go that or a 8600 ryzen is more for multi thread applications unless you playing cpu intensive games go Intel 8600. It won't lose to the 2600

for the 1080 ti i recommend the 8700k, the 8600k does fine but does hit 100% load in quite a few games.

Seems like an 8600 or 8600k is overkill for gaming and not very far from an 8400 in performance for the price difference. If you're gaming at 1080p high fps then 8600k or 8700k to match that 1080 ti. If you're just 60fps or 1440p+ then I'd say 8400 or 2600/2600x will be more than enough.

thats true, while there are more and more cores/ threads in cpu market, games tends to abuse resources and being not utilized (assassins creeds etc.) 

ryzen 2600 will not have this problem for a few years

I own R7 1700 and never see cpu being stress in gaming
