High End(ish) Multi-Purpose PC Build & Bottlenecking

I am building a PC for video editing, gaming, 3d animation, 3d rendering, CAD, and intense programming. I am trying to max my frame rate on a couple of games like GTA V, Rainbow Six Siege, and DOOM(Mainly FPS and Simulation\Sandbox games). I have a 1080p and 4k monitor picked out for this particular setup. I would be running multiple scenes from these games a couple times over in multiple resolutions ranging for the lowest 16:9 resolution to the highest supported. The change in resolution would hopefully be for a significant change in FPS. I was wondering what the bottleneck would be for this setup between the GPU and CPU? What could I upgrade to minimize the bottleneck and up my uncapped FPS count in these types of games?
