That PSU is complete overkill, a 450W one would run a GTX 1080 Ti with those specs just fine (though you can go 550W if you want headroom). I still recommend the 2600 or 2600X though.

I chose the 750w because I don’t want to change my psu for the next 7-8 years, and what to go for the 2600 or the 2600x I don’t see much difference

The 2600X is clocked higher and therefore will offer more performance out the box. Remember to get a B350 motherboard that isn't from MSI or Gigabyte, or any X370 motherboard to allow for overclocking. A 550W PSU would still last a hell of a long time, considering that PC parts are only going to get more and more power efficient in the future.
