Nvidia control panel and pixel formatting nightmares

Hey guys, I was hoping someone might be able to help me with an issue that's totally stumping me. For about 5 months now I've had tow 980ti's in SLI in my rig and for the most part it's been fine but recently I've been experiencing some major problems. The issue that's being reported by multiple games is something to do with pixel formatting, it stops Doom and minecraft from launching at all and causes random total system lockup in Overwatch. The only thing I can be certain of is my Nvidia control panel keeps bugging out and only has 2 options and the rest are totally missing. I have on MULTIPLE occasions completely removed all nvidia drivers in safe mode using display driver uninstaller AND I have reverted back to an older drivers
