Speccy reports that my cpu is around 35 degrees however speed fan reports that it is around 127 degrees. For some reference this is while idle, my cpu is an i7 6800k with a hyper 212 evo in a mid tower with not great airflow. Also i have recently been having some crashing issues when playing intense games such as pubg or overwatch and my thoughts is that heat is the issue and specifically my cpu overheating.

Your CPU cant hit that Temps. The PC would shut down (or bluescreen) way before that. If, for some Reason not, the CPU would be dead by now.

Run a Bench and check the Temps with Afterbnurner

127 tells you it's an error, fanspeed reads the wrong temperature sensor or doesn't read a sensor at all.

 

The sensors report the temperature as a byte... which has 256 possible values... so you have -127.. 0  and 0 .. 127  ... 127 is like default value, or like reading the wrong sensor or not receiving any temperature from sensor. The software is just too dumb to detect that.

 

Use smarter software like Aida64 for example to read the sensors.
