Would a GTX 1080Ti be better than a Vega 64 in an EGPU?

As an EGPU in a Mac environment AMD all the way. Nvidia has trash drivers for macOS and Apple builds AMDs drivers into the OS.

As an internal gaming card in a PC, 1080Ti all the way.

i agree although you should also account for the performance loss youll get from the bandwith loss and the dual core cpu (if it is you have that model) so choose your amd card wisely.
