well, if you're only running no more than 2 servers, the best would be the highest number i3 you can find.

the 7100 would be a good choice. (if you are only using 2 cores - AKA 2 servers.)

 

AFAIK they can use more, but you probably know more than I do.

Im looking to build a low power and small mini ITX server. Most games are running single core programs. I was looking into best single core options and I saw a i3 7100 for about $90 but I was wondering if there was any other good options for a CPU on a relatively small budget. Either way I think I will get a MSI H110I Pro with which ever CPU I choose.

Ryzen 3 1200 is a true quad-core, and is a much better CPU than an i3.

you could also buy a G4560, which should have been $60, but intel is creating an artificial shortage to bump up price.
