The worst part of your sentiment is it's true so many times... I have a friend who took 2 years of CS/ITAS here on the Island, then another 2 years in Alberta. Although he does indeed know more about the nitty configuration of certain proprietary cough Cisco networking and Windows Domain services than I do, some of the hardware stuff he tells me they're doing is stuff I knew about years ago. I'd love to waltz into his work, get a security clearance badge, and login next to the current employees, beginning my day as if I had worked there all along. :P

I'm 100% self-taught in the IT field with zero post secondary knowledge, and yet can configure LAMP webserver stacks from a Terminal window on most linux distros, and am able to walk someone through the majority of Windows Control panel screens for Windows 7 / 10 without a computer in front of me. To be clear, I say this not to boast - I'm merely pointing out that real world experience provides time to develop more critical thinking and troubleshooting skills than post secondary ever will, not to mention people skills.

If you were to give a job to a fellow such as me what kind of job would you give to someone such as my self who is working towards a computer science degree

You can work for Luke at Floatplane, LLC.
