An SSD is a type of storage, NVME is an interface, and M.2 is a connector.

A regular 2.5" sata SSD is all you need for OS and games.

I think it should be :
SSD - A type of storage device (Solid State Drive)
M.2 - A connector that enables PCIe based SSDs, to be smaller.
NVMe - An interface used to access some of the M.2 SSDs (it's faster than AHCI used in rest of the M.2 SSDs).

Any SSD that can read/write data close or over 500MB/s, is fast enough for games and OS.
