Ubuntu server, Debian, CentOS would all be great choices. For a beginner, I'd go for Ubuntu/Debian because it will be easier to find help. For the backing up bit, some googling might be required.

I would advise against Windows, it will force you to use a GUI (taking up precious RAM & CPU time) and is generally more bloated. Windows also has much more downtime when doing updates. (Linux Distros update on the job, instead of during shutdown, still needs to reboot to take effect)

Use the Debian net install ISO. It will give you a very light and secure base system.

Ubuntu server is a great choice for this one. You only need to know how to use that annoying interface (Text) but still you can easily configure it and link to be managed from another server or your PC.

Yes you can here are commands, choose GUI you prefer (I have 1000 pages of commands for Ubuntu on server so I replied that fast) :

  • Gnome 3 installation: sudo apt-get install gnome-shell
  • KDE see Kubuntu installation: sudo apt-get install kubuntu-desktop
  • XFCE installation: sudo apt-get install xfce4
  • LXDE installation: sudo apt-get install lxde
  • Openbox installation: sudo apt-get install openbox
  • Gnome Classic (old) a Gnome 3 desktop that looks like Gnome 2 installation: sudo apt-get install gnome-session-fallback
  • Ubuntu Gnome (Official flavor) installation: sudo apt install ubuntu-gnome-desktop

Since noone mentioned it so far:

unraid,

it is pretty simple to use and expand, its parity implementation is imo pretty great, but since you are running RAID 0 this might not be for you.

you can grow a lot with it!

But of course freeNAS, windows, windows server, and all the usual Linux distris will do a fine job :)
