Yep, the i7 is a good fit for that. The extra 4 threads over an i5 and the fact that games barely use over 4 threads anyways makes it a good fit.

By the way, be sure to get the newest BIOS on your motherboard before you put the i7 in and if you just bought it new.. I hope your motherboard has a Kaby Lake ready BIOS.

lots of games are using more than 4 cores, that's a myth.

Most still don't though. Many games also scale rather well to 4 threads when they see they can't really use more.

"most" games arguments don't work with newer games, I5s became outdated the second ryzen came out.

Than OP can allocate 2 threads to streaming and 6 to gaming. '''''problem'''' solved.

Also, most games argument still works when I don't know what games are being talked about.

Good to hear :)

In terms of what kind of settings you can reach with streaming sort of depends on your internet connection you have. Keeping that in mind you can decide the bitrate you want to stream at.

Around 15-20Mbps is recommended for 1080p60fps streaming, but you can sort of play around with this number + resolution + fps, depending on the speeds you have.
