I want to know if I can upgrade my pre-built HP Envy Phoenix 860-140 computer (https://support.hp.com/us-en/document/c04951674) gpu with an Asus Strix 1080 Ti oc edition (https://www.asus.com/us/Graphics-Cards/ROG-STRIX-GTX1080TI-O11G-GAMING/overview/). It currently has an Nvidia GeForce GTX 980 in it. I appreciate any help I can get! :D

You need to check the power supply, make sure it's not junk because if that fails it could take your whole system down. But yeah, upgrading from nvidia to nvidia is as simple as disconnect and remove old gpu, insert and connect new one

No need to upgrade the PSU if it's sufficient. Which, if it can power a GTX 980, a 1080Ti should be fine. An EVGA 750W G2 is such a weird recommendation, it's hella overkill for a single 1080Ti and is pretty expensive. You could get a new PSU for half the price of a 750W G2 that would be more than enough for a single 1080Ti. Again though, if your current unit is fine, there's no reason to upgrade.

Space would be my biggest concern since the big 3 fan Asus Strix 1080Ti design is, well, big. Doesn't look like you have a whole lot of room in that case, which isn't surprising, so measure up before you buy to make sure the GPU will even fit. Then, make sure your PSU is sufficient.

The required psu on the Asus website for it is 600W, and my current PSU is 500W so I don't know if I'll get away with my current PSU ;c

Full system with the Strix 1080Ti won't pull more than 450W. Quality matters more than wattage.

I agree. Personally, I would get a 600 watt gold-rated PSU just to be safe, because if that sucker goes, you can kiss your whole system goodbye, but you will in all probability be fine with the PSU you have.

Everything I know I learned from the internet. Also school.
