I need 2 IPS Monitors for my new setup. One have to be at least 75Hz and 5ms for gaming (either 1080p or 1440p , since 1440p monitors are usually really expensive ) , and the other should be just a good 1080p monitor.
I know that LG , SAMSUNG and ASUS monitors are great , but I really don't know anything else. 
My budget is strictly $500 - $600 for both

If you have an AMD/Radeon graphics card, I cannot recommend this monitor enough. I have a Dell SE2717H monitor I just picked up last month from Staples for $149 and absolutely love it. It is only 1080p, but it has 27" IPS panel with AMD FreeSync at 75 Hz.

This monitor has been on sale for $149 (USD) and Micro Center off and on since the beginning of the year. I will update this post tomorrow when the new sales come out for the day because right now they are out of stock (but typically reset at midnight).

I am running a Nvidia card so I won't be able to use freesync right?

Looks great just two questions : Does the curved option provide anything different?

Would be smarter to look for a 144Hz version similar to this ?

Correct, Nvidia cards are unable to use the open freesync technology. You want to look for a monitor with G-Sync technology from Nvidia

 

Answer 1: I have the flat version and a buddy of mine has the new (slightly) curved model. The curved verizon seems a little more immersive, but it's not as noticeable or valuable as the having a curve on an ultrawide monitor.

 

Answer 2: In most of the videos I have watched regarding refresh rates and G-Sync from LTT, everyone seems to value G-Sync much higher. I am not familiar with the power of your rig, but a 75 Hz monitor with G-Sync would be very enjoyable for playing games at 1080p or 1440p. The step up to higher refresh rate or higher resolution while keeping G-Sync technology seems to bring a very large jump in the price tag as well. With that being said, there are still noticeable improvements in the gaming experience and it is ultimately up to you what you want to spend your money on.

25" is way, way too small for an ultrawide, the vertical height would be tiny. A 34" ultrawide is the same height as a 27" 16:9.

The problem with G-Sync is price, there's an Nvidia tax of a couple hundred bucks for having it, while Freesync is much cheaper.

I am only asking because the curved 1 is cheaper than the flat so I thought something was wrong there

My rig will probably have either a 1070 or a 1080. The thing is I don't really know if I am gonna notice any major difference between 75Hz and 144Hz , so I am not sure 144Hz or even the G-Sync is worth as you said the large jump in price
