I am going to buy a new OC gaming PC and need advisement:

MOBO: Gigabyte Aourus GA-Z270X-Gaming Soc

CPU: i7-7700k

GPU: EVGA 1080 ti (FE)

RAM: G-skill Ripjaws 4x8GB (32GB)

PSU: EVGA 750 G3

CASE: Fractal define S

Water cooling: EKWB 360mm rad + 120mm rad

Storage: 1TB SSD (games),   and then I will salvage the parts from my current build, 250GB SSD (Booting/Systems), 2x 500GB HHD

 

I think those radiators are enough to support my build but please let me know if they're not.

I wasn't too sure about the storage, should i get a different brand that has better specs on their SSDs?

The mobo is my style and is great for OC, but i'm open to any other opinions.

No point getting a M.2 sata drive that's only as fast as SATA 3. Kind of obvious when the price of the M.2 is essentially the same as a 2.5" SATA SSD.
If you want something faster than SATA 3, you'll want M.2 NVME PCI-Express, like this one (or a cheaper lower capacity one)

Notice the major price difference compared to the only you listed. The speed is also 3500 MB/s compared to 540MB/s.

Should I get a 512GB M.2 and just store games with map loading problems like Battle field 4, and then store my regular games on my x2 500GB HDD

would optane make a difference in my HDD, I would have 2 M.2 slots

It would, but I don't know if it will also accelerate secondary drives instead of just the OS drives.
As for a fast NVME PCI-Express M.2 drive(Not m.2 sata like you initially wanted), I would suggest getting a 256GB one just for the OS, all of your applications and maybe a game or two that you use often, while keeping the rest on a regular HDD/1TB SSD like the one you initially wanted, in SATA 3 form.
