I'll keep this short. 

Xeon X5650 + Mobo + what RAM?

On eBay I see listings for " SERVER MEMORY: NOT FOR DESKTOP COMPUTERS!"

Not a RAM expert by any means, just trying to figure out if I can buy some cheap 16GB ram kit on eBay for ~$35 and It'll work or not for "PC/ server use"

Server use like some Minecraft server, Gmod... that kind of stuff.

assuming Nope as in I can't use this RAM, so I should buy conventional PC RAM that I'd buy for my own computer right? But shouldn't it be ECC or would that not really matter?

So don't buy ECC? After looking at Intel ARK a bit more, the CPU supports ECC Ram, but the next limitation is Chipset, meaning my Motherboard chipset correct?

CPU supports it, motherboard doesn't.

what board? If your buying a server board, id go ecc, a x58 desktop board might not work with ecc.

Server Boards are cheap on eBay for ~$80 
but if I get the server board that'd mean I get the ECC ram, right, but would that mean I'm giving up if I went with an X58 Motherboard?

You would be giving up overclockablity with the server board.

I could still use a simple OS like Windows though right? (sorry if that made you cringe) 

I'm thinking since the server PC wouldn't be for gaming, I don't NEED the OC, USB 3.0 and that. I only planned on getting something like a GT 710 for a GPU because it's not for gaming... 

Anyway, I get the CPU ($30), Server MoBo ($50), and ECC RAM ($40). and I'm cooking right? Obviously, need the PSU and that but that's easy, right?

you need the pro version of windows.

 

What are you using it for? For a basic desktop, id just get a pentium, there cheaper and use much less power and support modern features and have a igpu(thats much better than a 710)

I try to run some server stuff on my i5 with my puny 8GB of RAM, and everything just starts exploding with about 3people on Minecraft with some big modpacks

X58 motherboard while running a Xeon is supposed to support ECC Ubuffered/unregistered RAM. I can confirm that REGISTERED will not run though. Unregistered ECC RAM is more expensive than general desktop RAM, so just buy the best priced desktop RAM you can.
