How much overclock would an i5 3570K need to match a Skylake/Kabylake i5 in CPU intensive games?

It should beat 6400 but still you can push that cpu to 4.8 to 5.0GHz without any problem many people did that and their systems are stable. Then maybe you can match to 7600k at 4.1 or 4.2 GHz(Turbo boost speed) or 6600k at turbo speed.

I edited my previous post. I though the 7600k base clock is higher than what it actually is.

About 3.9GHz-4.0GHz to match 6400.

 

However, RAM speed is a factor here as well. Faster DDR4 helps with Skylake/Kaby Lake performance as well.

Keep in mind you have to buy a badass cooler to get clock speeds that high.  A Hyper 212 Evo isn't going to cut it.

I use a DeepCool Gammaxx 400, how high you reckon I could get? I'm hitting around 60°C on my i5 2500 at 4.1GHz.

I don't see you getting higher than 4.2 with that cooler.  I don't have personal experience with it though.
