Those are terrible prices and for 1080p 60hz gaming there is zero reason for you to get those. But hey, it's your money not mine.

The CPU seems fine for what you're doing. But if you really need to upgrade then get the 6700K. 1060 is fine for 1080p/60. Maybe in the future you can upgrade your monitor and GPU together.

Out of the 2 the GPU, a skylake i5 will be fine for a few years yet. If you stayed with intel the only advantage in the normal i3/i5/i7 setup would be an i7. Which might have slightly higher clock speeds and hyper threading.
