M.2 is working off the sata controller, nvme is working off the pci bus. I might be wrong tho.

Nvme is a lot faster too

M.2 is a physical standard were as nvme is a protocol that can run on m.2 (most new boards today have m.2 with nvme support but check it before buying or installing a drive

M.2 is the connector used to connect the part to the computer. NVME is a communication protocol that the part uses to talk to the computer.
