GTX 1080 is way overkill for 1080p.

I would recommend a 1440p ultrawide

Not everyone plays the most demanding games. Overwatch on a 1070 will easily hit over 100fps, as will a lot of games from last couple years. It's a better value to do this, 1070 + high refresh 1440p, than it is to do 1080 + 60Hz 1440p.
