Two 1080s probably isn't the best idea considering how multi cards aren't really great atm. I would switcfh it out for a TItan XP.

Yes, but its not really a good PSU.

the other monitors on right and left are 1080 or 1440p

but I don't know which resolution should it be?

IS, or Planning to be? DO you have the display?

 

Gamming at 4k means more detail, gamming across three displays means wider screen space. the 1080 cannot only power one 4k display. THe resoloution and displays depend entirly on your budget and personal needs/prefrence.
