More on topic, I assume you mean car-gps? Cause a "value" gps would be a cheap phone with google maps.

for hiking, bicycle riding, offroading. Waypoints would be needed, as well as logging the trails I used out in the forest, or in city parks.

Your mobile phone. Easy. I use an app called "Map My Run" on IOS
