Sadly the fact that defects increase quadratically with the linear size of the sensor make that a very costly proposition for CCD or CMOS based sensors. Large format scanning backs exist but are only suitable for reproduction work.

 

On the other hand a less than commonly known fact is that depth of field doesn't depend only on aperture, sensor/film size and focal length. Different optical formulas for lenses that have the same focal length can induce variations - I think that this isn't leveraged by lens makers to sell small format low-dof portrait lenses because the effects seems to be found mostly in really extreme designs, like the 250/5.6 Superachromat compared to the conventional Sonnar.

 

Some medium format tilt-shift solutions that are digital friendly do exist, but I never tried them.
