Two 23'' 1080p monitors is common. I'm personally running an xstar 1440p monitor (in landscape) alongside my previous 23'' 1080p monitor (in portrait).

If you're not gaming, definitely 1920x1200s.

If you're not gaming, definitely 1920x1200s.

Would it be a good idea to go with a couple of 15" ones?

15 is really small for a desktop considering the distance you will be sitting from them (I sit about 4 feet away from mine). I would say you would be better off with one 23" monitor than two 15" monitors.

Personal preference. If you just have them lying around already, go ahead. If you're getting new displays, 23" 1080p would be my recommendation.

24" @1200p,16:10 is great for productivity and content creation. i use a 1200p for work one and 1280x1024 one  for skype,and music and stuff and a 1080p for movies/youtube

it's personal preference i guess .. i think 16:10 monitors are pretty cool when it doesn't come to movie watching and gaming, also atleast in my setup a 24 inch monitor is pretty big, so something along the lines of 2x 23 inch monitors should be pretty sweet, still big enough to give you a good view but maybe the tiny bit smaller compared to a 24 inch to not make it seem bulky or overwhelming, again it's all up to the individual and how your setup is, how much space you have, how your desk looks like and how far you will be sitting away from it.
