So I want to make my PC near silent at idle, and I know that by adjusting fan curves I can do that. But, if I set my case fans to not kick in until ~45C will anything bad happen? I also and using a Corsair h100i v2 water cooler for my cpu, so I turn the fans off for it (at idle) will things go badly? I also have a reference GTX 970, so can I turn the fans off (again at idle) and nothing bad will happen? Thanks.

If the motherboard supports it, nothing bad will happen, as long as the pump is going. If the pump isn't running, it could get very hot very quickly.

No, you're fine, depending on the room temp, the fans might turn on even at idle. But there's no problem.
