I use 3x1 portrait and it is great.  Eyefinity is far more useful for general use and productivity than it is for gaming in my opinion.  AMD has a great tool called hydravision that creates a virtual monitor grid that you can attach windows to and maximize them on individual monitors while still in eyefinity.  Editing photos and videos in portrait can be difficult though.  Using photoshop I have to drag the window around to avoid the bezels.  Only 1080 pixels across isn't enough for a photoshop window.
