The 5820K will be a huge benefit in video editing and it will also enable you to play games while streaming and, generally, do some "hardcore" multitasking...

PSU is overkill, also i would go with single GTX 1070 instead of 2x480.

for the price of 2 rx 480's, just by a 1070, multi GPU configs aren't worth-it, especially for amd, their single cards are already supported poorly in games, much less 2.

2x RX480S > GTX 1070

But not all games support CF

yes, crossfire eats alot more power, has micro-stuttering and doesn't scale in some games. but you can cram a gtx 1080 in your budget so...

CPU: AMD Ryzen 5 5600X Heatsink: Gelid Phantom Black GPU: Palit RTX 3060 Ti Dual RAM: Corsair DDR4 2x8GB 3000Mhz mobo: Asus X570-P case: Fractal Design Define C PSU: Superflower Leadex Gold 650W

I like AMD, since they have cheap cards for good performance, however, as everyone else say, it is a better idea to get a 1070 or 1080 than getting 2 rx 480's. You should be fine with a 1070, 1080 is just too much and the 1070 is great for VR. I also agree with Herman McPootis' posts other than the GPU.
