I would recommend spending the extra few bucks and getting an RX 480 instead of a 380. Or get an RX 470 if you really can't afford the extra couple bucks.

Also, I would highly recommend getting a single 8GB stick of RAM. If you get 2 4GB's now, then its going to be more expensive to upgrade your RAM in the future if you ever need more than 8GB. Having an open RAM slot on your motherboard will allow you to just buy another 8GB stick in the future and use that to get 16GB instead of having to buy a fresh 16GB kit.

I was going to get 2 sticks for dual channel

Well its up to you, but my recommendation still stands. If you don't think you will ever need more than 8GB in this computer, or that you will never upgrade this computer, then go for it. But the real world performance difference between having and not having that dual channel for things like gaming is going to be very minimal.

I'd go for an RX 470 instead of the older R9 380 - the RX 470 has about the same performance, and is a lot less power hungry.

It's a toss up about whether or not to get 2 sticks of RAM or just one. Getting one makes it easier to upgrade later, but until then you'd be getting a bit less performance by not utilizing dual-channel RAM access.

You could spend a bit extra and get a motherboard with 4 RAM slots.

A sieve may not hold water, but it will hold another sieve.
