Do skylakes still bend?

They didn't change anything or do a recall, so I assume that it's as much of a problem as it ever was to begin with. But that said, I've only heard of it happening in a couple of sensationalized cases near launch and not at all since. So… my assumption is that as long as you stick to coolers with official, explicit Skylake support, and you don't tighten the mounting screws with a power tool, you should be fine.

I've not had any issues but I've been using the stock coolers mostly for people.
