I am wanting to build my first pc, and trying to pic a GPU for my build is painstaking. All I want to do is play almost any game I want (with a couple of exceptions, Im looking at you crysis) at 1080p, at high to ultra, with 60 fps a minimum. Im not wanting to push 4k or anything fancy like that. I just want to play the games I want to and have them look pretty. My original plan was to get a strix 970, but then someone suggested the AMD rx 480. someone also suggested a  gtx 1070 for a little future proofness, is a 1070 overkill? I am just trying to get the right card for me.

depends on your budget and when you plan to upgrade again, I don't really think you can currently beat a gtx 1070, it might be overkill now, but in a year or two it should still run 1080p just fine on new games. Certainly wait for the stats on the rx 480, but if you must buy now, get the 1070.
