i7-4790k vs i7-6700k?

depends on how much you can sell it for :)

350-400 AUD, then definitely, 250 and lower, no, 250-350, look into the benchmarks ;)

The only thing is trying to get someone to buy it

Nobody said you need an Intel processor try with AMD FX series or wait for Zen.

I would keep the 390 and put it into the build posted above.  You can get the 6700k and still have some cash left over, or the 6600k is plenty capable of handling light rendering, it's just gonna take a bit longer.  You can always upgrade the gpu later as the 390 is still a good card.

CPU - I5 6600k @4.5ghz, AIO Cooler - H100i GTX, MOBO - MSI Z170 Gaming Pro, RAM - G-Skills Ripjaws V DDR4 2400 mhz, GPU - ASUS Strix GTX 1080, SSD - Samsung 850 Evo 250g, HDD - WD Black 1TB, PSU - Corsair TX 750, Case - Cooler Master Mastercase Pro 5, Monitor - Dell S2716dg 2560x1440 144hz gsnyc  27", AOC I2757FH 1920x1080 75Hz 27", OS - Windows 10 Home.

I don't see a reason to get an older generation. The 6700K supports DDR4 which can actually make a difference in some games. It also has a new and better architecture. A better option is the 6800K, since you do rendering, although it is a bit more expensive + X99 mobos are also a bit more expensive.

At this point in time DDR3 is a dead end.  Any build made using DDR3 will mean buying new RAM for any subsequent build.  For that reason alone I'd go 6700k at this time.  You will have a better chance of being able to re-use the DDR4 on you future build.
