Primegrid, due to the extreme transparency (that other projects seem to lack) and actual sense of acomplishment.

For good reason. They have one of the best forums, they are 100% transparent with what they do and the results they get, maths is a subject of interest for the majority of people that help in distributed computing (WCG did a study on this), and they host challenges that help grow motivation.
