lite vs lr vs pro

So my parents house has thick stone walls and is on the large side.

Would it be best to go for the ubiquiti unifi ap ac pro for its better quality or two lites so devices can communicate back better or idk?

Assuming everything is hardwired:

2x Pro > 2x Lite > Pro > LR > Lite

For most use cases? Yes. Two lower spec access points will give you better coverage and better overall speed. A single higher end access point will give you better speed at close range with a lower overall speed and worse coverage. Given it's a large space with stone walls? I think it's fair to assume that coverage will be the biggest issue.
