Hi everyone, I am new here.

First of all, I love Linus's videos and I am sure the community is awesome too 

Alright now back on topic.
My current PC sucks and is old. (Laggy with some games like GTAV and DayZ)
I build it in 2013 and it has a GTX 760 2gb videocard and an AMD Athlon x4 "quadcore" processor  (It's not really a quadcore, it says Cores: 2 and Logical processors: 4) with 3.80 Ghz (Overclocked it to 4.30Ghz).
Another reason why I am getting a new pc is because I am getting a heritage?. 
So my budget is about 5k

I have looked around a bit and came up with a build with these parts:

 

MSI x99A GODLIKE GAMING, socket 2011-3 motherboard
Corsair 16GB DDR4 2800 Mhz quadkit and I want 2 of them so 32gb total

Intel i7 5930k 3.5Ghz 6 core CPU

ASUS GTX TITAN X x2 (SLI)
Samsung 850 evo 250gb ssd

Western digital black 3tb hdd

corsair HX1000i 1000 watt powersupply

Corsair Graphite 780T big tower

ASUS BC 12d2ht silent bluray combo

Corsair hydro series h115i 

 

the total is 4.760 euros.

I want to use the PC for gaming, virtual reality and maybe start a youtube channel. I already have a blue yeti mic so thats that

 

So why I made this topic? Well because I am not sure if I should buy the parts. 
I've never had such a good pc, I always bought a smaller budget pc (The one I have rn was about 600 euros)
Do I have enough watts or should I stick with 1 videocard? I heard you can render 1 eye with 1 card and the other eye with the other when using virtual reality.
Is the CPU overkill & should I get a cheaper i7? They only sell 3 i7's here and the one I chose was the middle-priced one.
I was also thinking of watercooling but I haven't done it before but I also think it is kind of useless..

The motherboard has 2 Ethernet ports which is nice if I want to game & download, right?

Welcome to the forums! I suggest swapping out the Titans for 980tis. With a nice overclock, they will perform the same or better as a Titan x. Do you really need an optical drive? Also I would suggest swapping the powersupply for a more reliable EVGA model. For vr, the dual rendering thing is coming, but I don't think it's here yet. Perhaps consider going with a cheaper board, and maybe get a 5820k. It really depends on what you're trying to do and what resolution you're doing it on. You could probably shave off a lot of the cost by swapping put these parts for cheaper ones, but it depends on what you are trying to do.

Hmm yeah I could go for a cheaper motherboard but I have a nice bose system and with my current motherboard I hear a lot of electronic interference (noise) and its even worse with headphones.
and overclocking videocards, is it stable?
And about the m.2 ssd, I've looked it up and it says the speed is the same as a normal SSD? 500mb/s

For your ssd I would get Intel's 750 series pcie nvme ssd. It's a lot faster than the 850 evo. Is your CPU overkill, idk, depends on what your work load is. Also, what cooler are your gonna using, overclocking your 5930k will give you some serious performance gains.

The NVME SSD;s are not worth the extra price premium in most cases. It all depends on what you are doing with the pc. For things like gaming and load/boot times it won't make any difference.

Overclocking gpus is very stable if you apply a stable overclock. For your audio situation, I suggest using external DACs and amps to remove the interference and improve overall audio quality. M.2 uses PCI lanes for a much faster data transfer connection.
