Nvidia Surround (3 monitors) isn't working...

Did you change the "Topology" option to 1x3? It is automatically set to 1x2 and will not let you activate all 3 as you described.

I currently have 3 monitors (BenQ RL2455, Dell ST2410 and Acer G246HYL). They are all running on 1920x1080 resolution, at 60hz and all 3 set on landscape. I'm trying to get surround to work on a single GTX 780. One monitor is plugged in with an HDMI and the other 2 with DVI. However, I'm unable to select all 3 monitors for the surround mode (I'm only allowed to select 2 out of 3 monitors to do surround by the Nvidia control panel). Is it not possible to get a 3 way surround without SLIing the 780?

You can certainly run surround with just one card.

Maybe try disconnecting and reconnecting the cables.

You need to use specific connections on the card for surround(don't ask me why idk). You need to take the monitor that is plugged into the HDMI port and put it on the Display port instead.
