I recently replaced my stock cooler for my CPU which is a Core i7 920 with a Cooler Master Hyper TX3 and fired up a game to see the temperature while under load. The temperature runs up to 70c when i'm playing games and at idles at around 51c. Is that normal for a i7? I know the 920 is quite old and runs pretty hot but i'm starting to think maybe I might have over applied or mounted the heatsink wrong.

51 idle is pretty high. try reseating the cooler with fresh thermal paste
