Because titan Zs are two underclocked titan blacks, which were never individually faster than the 390x, and on top of that sli scales worse than crossfire.

 

Also, the titan Z in your "first rig" is most likely heavily bottlenecked by the fx4300, so I would ignore the results you get with that.
