Home Server build, Is this overkill?

The server will be used to backup apple & windows computers and using it for Plex to streaming movies that are 1080p. Maybe 1-2 transcodes happening at a time.
I was hoping to use FreeNAS so I can use zfs mirror the storage for backups of those backups which would only be able to use 6TB of the 12TB installed.

Not sure you need 16GB for just what you posted, but the rest is fine.  LOVE ZFS replication!

Well usually you want ECC memory, but If it's just media stuff you should be fine without it, just add in a battery back up and you should be set, you could also go with a Xeon 1231v3 with a server board + ECC if you care about your data more

Well I was going to run the FreeNAS off a usb which runs of ram and you need 1GB Of ram for eac terabyte of data.
